16.Old Fashion Bread Pudding
Ingredients
2 cups Milk
4 cups coarse bread crumbs
Heat milk to scalding, and pour over bread crumbs, cool and add:
1/2 cup melted butter
1/2 cup sugar
2 beaten eggs
1/4 tsp salt
1 cup seeded raisins
1 tsp cinnamon or nutmeg
Preparation:
Pour into 1-1/2 qt buttered casserole pan. Bake at 350 degrees 40-45 minutes or until knife comes out clean. Serve warm. 6 servings
17.Barbecue Meat Loaf
Meat Mixture:
1 1/2 lbs. ground beef
1 cup bread crumbs (I use oatmeal instead)
1 chopped onion
1 egg
1 1/2 tsps salt
1/4 tsp. pepper
Barbecue Sauce:
1 can 16 oz. tomato sauce
1 cup water
3 tsps. vinegar
2 tsps. prepared mustard
3 tsps. brown sugar
2 tsps. Worcestershire
Preparation:
Mix 2/3 cup sauce with meat mixture. Pour rest over loaf. Bake at 350 degrees for 1 hour and 15 minutes. And serve. I like to serve it with home fries and beans. :-)
18.Cherry Michel
Ingredients
1 cup cold skim milk
1 package(4-servingsize)Jell-O brand Cherry flavored sugar-free gelatin
1 cup crushed ice
1 large banana,cut into chunks
Preparation:
Pour milk into blender, add remaining ingredients. Cover and blend at high speed for 30 seconds. MAKES 3 CUPS/3 SERVINGS
19.Scotch Eggs
Ingredients
1 lb. bulk sausage
1 T. parsley, chopped
1 T. chopped onion
1/4 t cinnamon pinch nutmeg
4 hard boiled eggs, shelled
1/2 c. fine bread or cracker crumbs
Preparation:
Combine first 5 ingredients and shape into 4 patties. Place one egg on top of patty and form meat mixture around the outside, until covered. Roll each covered egg in bread crumbs. Bake at 350 for 15-20 mins or until browned. Makes 4.
20.Shrimp Alexander
4 oz. butter or margarine
Prepared bread crumbs (see recipe below)
6 large shrimp
In a small saucepan, melt 4oz. butter. The butter should be warm, not hot. Dip cleaned shrimp in warm butter, one at a time. Let excess butter drain off, then pad buttered shrimp into prepared bread crumbs (see recipe below). Place breaded shrimp on baking sheet, vein side down with the tail curled up. Place sheet in 500 degree oven for approximately 4-5 minutes, until golden brown. Serve with white wine butter sauce or any other light cream sauce.
21.PREPARED BREAD CRUMBS
2 cups plain bread crumbs
2 tsp. finely minced shallots
2 tsp. chopped parsley
1½ Tbsp. chopped fresh garlic salt and pepper
Mince shallots, chop garlic and parsley.
In a mixing bowl, combine garlic, shallots and parsley into plain bread crumbs, being careful not to leave any lumps of garlic or shallots. Add salt and pepper to taste.
22.Wild Walnut Apple Cake
Ingredients
2 eggs
2 cups sugar
1/2 teaspoon vanilla extract
2 cups all-purpose flour
2 1/2 teaspoons ground cinnamon
2 teaspoons baking soda
1 teaspoon salt
1/4 teaspoon ground nutmeg
4 cups chopped Washington red apples
1 cup chopped walnuts
GLAZE
3/4 cup sugar
1 cup milk
2 tablespoons butter
1 teaspoon vanilla extract

23.Tex-Mex Appetizer Tart
Ingredients
1 Pillsbury Refrigerated Pie Crust (from 15-oz. pkg.
6 oz. (1 1/2 cups) shredded Colbe-Monterey Jack cheels blend
1/2 cup roasted red bell peppers (from 7.25-oz. jar), grained, chopped
1/2 cup mayonnaise
1 (4.5-oz) can chopped green chilies
1/4 cup chopped fresh cilantro or parsley Salsa
Preparation
1. Heat oven to 375 degrees F. Remove crust from pouch. Place crust on ungreased cookie sheet; press out fold lines.
2. In medium bowl, combine cheese, roasted bell peppers, mayonnaise and chilies; mix well. Spread over crust to within 1 inch of edges. Fold crust edges over filling to form 1-inch border; flute.
3. Bake at 375 degrees F. for 25 to 35 minutes or until crust is golden brown. Sprinkle with cilantro.
Let stand 10 minutes.
Cut into wedges.
Serve warm, top with salsa.

Ingredients
16oz Sour Cream
16oz Real Mayo
3 Diced Tomatoes
1lb Bacon Cook Crisp & Crumbled
Preparation
Mix all together and refrigerate for about 3 hours (or just make sure it's cold)
1 loaf of bread (or several different for a great mixture.
Toast well & cut into triangles.
25.Hearty, Healthy Spinach Rice
Ingredients
1 Bunch of washed fresh spinach chopped into pieces
3-4 garlic cloves minced approx
1-2 tbsp fresh ginger, grated
2 tbsp olive oil
1 tin Campbells chicken broth with herb & Garlic
2 cups uncooked rice
3 cups of water.
Preparation
Saute ginger & garlic in olive oil until lightly brown, add spinach and cook spinach until wilted and partially cooked, this takes about 10-12 minutes. Add rice and saute in with the garlic and ginger just until rice is coated. Add tin of chicken broth,and water, bring to a boil then reduce heat and simmer until rice is cooked and all the water is absorbed. I have made in my electric frying pan and also on top of the stove with excellent results.
26.Mahoney Family Famous Lasagna
Ingredients
2 peaches peeled and cubed
4 C water
1 C sugar
3/4 C Fresh Lemon Juice
Preparation
Bring the peaches, sugar, and water to a boil, and then simmer until the sugar is dissolved, about 10 minutes. Allow the mixture to cool, then strain through a sieve, pressing to extract as much juice as possible. Stir in the lemon juice, and serve in tall glasses over ice. Serves 4.
27.Chocolate Eclair
Ingredients
1 10oz container Cool Whip 1 Box Graham Crackers
2 small or 1 large box Instant Pudding (any flavor - French Vanilla and Pistachio are best)
1 Container of Milk Chocolate Frosting (or make your own)
Chopped nuts or other topping if desired
Preparation
In 9x11 cake pan line bottom completely with whole graham crackers (it is ok to overlap them to cover) In mixing bowl, mix pudding as per directions. Add cool whip blending thoroughly. Pour pudding mixture over crackers in pan. Take whole Graham crackers and icing them as you go, lay them over the top of the top of the pudding mixture until the entire top is covered. Break crackers as needed to fill. Gently use a knife and spread icing as needed to make a smooth top. Sprinkle top with chopped nuts or other topping if desired. Refrigerate for approx. 6-8 hours to allow Graham crackers to soften. Must keep refrigerated, serve with large spoon in a dish.
28.Crab Stuffed Zucchini
Ingredients
1/2 lb. crab meat (imitation tastes great) 4 zucchini (about 7")
2 eggs, beaten
1 C. shredded cheddar cheese
1/2 C. small curd cottage cheese
2 T. each, minced parsley & onion (or substitute w/green onion -- two birds w/one stone)
1/2 tsp. salt
dash pepper
Preparation
Wash zucchini and trim ends. Cook until tender in boiling salted water and cover for about 10 minutes. Cut zucchini in half lengthwise, scoop out seeds and drain zucchini shells. Combine crab and remaining ingredients. Spoon into shells and bake on greased baking sheet at 350 degrees for 15 minutes, then 450 for 5 minutes.
Tip: I like to top them with a little extra cheese before baking. After cooling just a bit, I cut them into bite size pieces. Believe me, this is a real winner of a "pupu"! (I'm sure you know, that means appetizer in Hawaiian :). I have no doubt that this recipe will delight the taste buds of the Recipe Master. ENJOY!
29.Mahoney Family Famous Lasagna
Ingredients
10 cups of your own sauce
2 32oz containers of Ricotta Cheese
2 16 oz containers of Parmesan Cheese 2 eggs large bag of Mozzarella Cheese 3 lbs Lasagna Noodles
Preparation
In a large bowl, add Ricotta Cheese and eggs and stir until well blended. Add parmesan cheese. Stir until well blended. Add 3 handfuls of mozzarella cheese and stir. Cook Lasagna noodles until they are half way down. (Not to hard but not soft either) In a 13x9" Baking pan pour sauce on bottom until covered. Add a layer of noodles all across the sauce. Add mozzarella cheese across noodles. Another layer of noodles. Then add a layer of cheese mixture. Add noodles. Then add sauce. Repeat this layering process till you can not fit anymore into pan. Bake at 450* for 45 min . Then add Mozzarella cheese to the top of the lasagna and continue to cook until golden brown. Let stand for 15 min and enjoy.
30.Mattison's Monkey Bread
Ingredients
Preheat oven to 350 degrees
4 cans biscuits (1/4 them)
Roll in 1/2 cup sugar and
2 t. cinnamon Toss into a greased bundt pan.
Melt 1 stick oleo and 1 cup brown sugar-bring to boil
Preparation
Pour over biscuits. Bake for 30 min. Immediately turn over onto large plate. Serve while warm
